The red drum is notable , and commonly known
as the
redfish. It achieved fame by its use in Cajun cooking as Blackened
Redfish. In fact this type became so popular that shortages have occurred
and in many states the red drum/redfish is now protected. Black drum or
weakfish (sea trout) are now used in its place and are becoming popular in
their own right.
Do not use drum in ceviche or sashimi; they are prone to parasites. |
